Beef Bowlrito

Yield: Serves 4
Ingredients:
Cilantro-Lime Rice:
2 cups hot cooked brown rice
1 tbsp freshly squeezed lime juice
1 tbsp minced fresh cilantro
1/2 tsp grated lime zest
Spiced Beef:
1 1/4 lbs (567 g) extra-lean ground beef
1/2 cup diced onions
1 tsp minced garlic
1/4 cup ketchup
1/4 cup water
2 tbsp taco seasoning
Toppings (optional):
Corn Greek Yogurt or sour cream
Black beans Shredded cheese
Salsa Chopped green onions
Guacamole Fresh cilantro
Instructions:
- Combine hot rice with lime juice, cilantro and lime zest & keep warm. (Mix everything in the rice pot, put the lid back in until you’re ready to assemble).
- Heat a 10 inch, non-stick skillet over medium-high heat. Add beef, onions and garlic. Cook and stir until beef is cooked through and light browned, about 5 minutes. Add ketchup, water and taco seasoning. Mix well & cook until mixture is hot and bubbly. Remove from heat.
- To assemble, equally divide hot rice mixture among 4 serving bowls. Top with hot, spiced beef and toppings of your choice.
