Pumpkin Oatmeal Muffins
Yield: 12 muffins or 48 mini muffins
Ingredients:
1 ½ cup whole wheat flour
1 cup oatmeal
1 ½ tsp pumpkin pie spice
½ tsp baking soda
1 tbsp baking powder
1/3 cup canola oil
1 egg, beaten lightly
¾ cup brown sugar or ½ cup honey
¾ cup milk
1 cup canned pumpkin
Streusel Topping:
¼ cup oatmeal
1 tbsp. brown sugar
1 tbsp. butter
¼ tsp cinnamon
Instructions:
- Mix together flour, oatmeal, spice, baking powder and baking soda in large bowl.
- Mix together oil, egg, sugar, milk and canned pumpkin in medium bowl.
- Add liquid mixture to dry mixture. Stir until combined.
- Fill greased muffins tins 2/3 full.
- Top with streusel mixture and bake at 350°F for 18-20 minutes.
