Pumpkin Oatmeal Muffins

Yield: 12 muffins or 48 mini muffins

 

Ingredients:

1 ½ cup whole wheat flour
1 cup oatmeal
1 ½ tsp pumpkin pie spice
½ tsp baking soda
1 tbsp baking powder
1/3 cup canola oil
1 egg, beaten lightly
¾ cup brown sugar or ½ cup honey
¾ cup milk
1 cup canned pumpkin

 

Streusel Topping:

¼ cup oatmeal
1 tbsp. brown sugar
1 tbsp. butter
¼ tsp cinnamon

 

Instructions:

  1. Mix together flour, oatmeal, spice, baking powder and baking soda in large bowl.
  2. Mix together oil, egg, sugar, milk and canned pumpkin in medium bowl.
  3. Add liquid mixture to dry mixture.  Stir until combined.
  4. Fill greased muffins tins 2/3 full.
  5. Top with streusel mixture and bake at 350°F for 18-20 minutes.
