Beef & Quinoa Meatloaf
Yield: 8 servings
2 lbs (907g) extra lean ground beef
1 cup cooked quinoa
1/3 cup freshly grated Parmesan cheese
1/2 cup barbecue sauce, divided
1/4 cup copped fresh parsley
1/4 cup grated or finely minced onions
2 tsp minced garlic
1 tsp dried basil
1/2 tsp freshly ground black pepper
- Preheat oven to 350° F. Spray a broiler pan with cooking spray or lightly oil. Line bottom of pan with foil for easier clean up.
- In a large bowl, combine beef, quinoa, Parmesan, 1/4 cup barbecue sauce, egg, parsley, onions, garlic, basil and pepper. Mix well using your hands. Form mixture into an 8 x 4-inch loaf on prepared pan. Slather top and sides of loaf with remaining 1/4 cup barbecue sauce.
- Let meatloaf stand for 10 minutes before serving for easier slicing.
