Greek Yogurt Chocolate Mousse

Ingredients:
  • 1 cup greek yogurt
  • 1 tbsp honey
  • 2 tbsp cocoa powder
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 1/4 cup dark chocolate chips (* 80% and up is best for antioxidants!)
  • chopped chocolate and mint leaves for garnis

 

       

      Instructions:

      1. Place the Greek yogurt in a mixing bowl. Add the honey, cocoa powder, vanilla, and salt. To melt the chocolate, place it in a microwave-safe bowl and microwave for 30 seconds. Mix well, and continue to microwave in 30-second intervals until melted. If it seems clumpy, try adding 1/8 tsp olive oil to the chocolate.
      2. Pour the melted chocolate over the yogurt. Whisk using a hand mixer for 60 seconds, until well incorporated.
      3. Transfer the yogurt to a serving bowl and cover with plastic wrap. Refrigerate for at least two hours. Garnish with chopped chocolate and mint leaves, and enjoy
