Cinnamon Baked Apple Slices with Greek Yogurt

 Yield:  4-6 servings

 

Ingredients:
2 1/2 lbs apples (about 5 large or 10 small) 

1/4 cup water
2 tbsp lemon juice

2-3 tsp cinnamon

2 cups unsweetened 1% Greek yogurt

 

Instructions:

  1. Preheat the oven to 350F.  
  2. Slice apples into 1/4-inch-thick slices. Place in a lidded baking dish or Dutch oven, or crockpot. 
  3. Add water, lemon juice, and cinnamon. Tossing to coat apples evenly.
  4. For the crockpot: cover and cook on low for 4 hrs or high for 2 hrs. For the oven: Cover with lid or foil and bake for 35-45mins until tender.  
  5. Let cool for 10 mins then mix the apples, covering with the juice that has formed on the bottom. 
  6. Enjoy warm or serve with ½ – ¼ cup of unsweetened Greek yogurt per serving, or a drizzle of almond butter.  
  7. Store the baked apples in an airtight container in the fridge for ~ 5 days. 

Tip: for an easy, hands-free option, the crockpot method is great for batch cooking!
