Cranberry, Broccoli & Toasted Almond Salad

Yield: Serves 8

 

Ingredients:

 

4 cups bite sized broccoli pieces
1/4 cup thinly sliced onion
1/2 cup of dried cranberries
1/2 cup chopped, toasted almonds (or sub pumpkin seeds)

 

Dressing:

1/2 cup plain yogurt
1/4 cup mayonaise
Juice of half a lemon (about 2 tbsp)
2 tsp sugar
1 tbsp chopped fresh dill (or 1 tsp dried)
Fresh ground pepper, to taste

 

Instructions:

 

  1. Pour dressing over salad, and eat right away, or let marinate for a couple of hours in fridge.
